The History of Saint Lucian Coffee
Legend has it that in the 1700s, a Frenchman smuggled a single surviving sapling from the mother tree originating in Ethiopia and planted it in the French Caribbean islands—long before coffee was mass-produced in the Spanish colonies like Colombia and Costa Rica. Our coffee, nurtured in Saint Lucia’s rich volcanic soil, offers a cup that provides a truly special and unique experience. Depending on the region and the neighboring crops—whether cocoa, cinnamon, or nutmeg—the flavor profile can range from dark chocolate with floral notes to ripe berries accented with a hint of spice, followed by a touch of bitter walnut and light smokiness.
Wake Up and Taste the Coffee
What makes a great cup of coffee? Is it the aroma, the taste, the moment of pause it offers, or the caffeine rush? At Noble Tree, we believe it's the smoky, fruity, smooth, and non-bitter flavor that comes from high-altitude coffee grown in Saint Lucia's volcanic soil. Our beans are hand-picked at peak ripeness and carefully processed using a wet method that yields a fine gourmet coffee so rare we can only harvest a few tons per year. But the result is absolutely worth it.
The Journey from Bean to Cup
Coffee begins as a single cherry, which, when opened, reveals two perfect beans encased in a parchment shell—resembling a pistachio nut but tasting as sweet as honeydew melon. However, it’s the toasted delight within that we seek. It takes about 13 grams of these beans to make just one cup of coffee, but every step is worth the effort.
Coffee, much like cocoa, requires meticulous care and attention throughout the processing stages, including slow drying under the sun. But the true art of coffee lies in the roasting process. At Noble Tree, we take pride in knowing exactly where our coffee is sourced, and we roast each batch in small quantities to ensure quality.

Sustainability
At Noble Tree, we are committed to sourcing 100% of our coffee from local farmers. We know each farmer and the regional area where our coffee is grown. For every tree we harvest, we replant its best seedlings, offering support to our farmers in every way we can.
Specialty Coffee
Processed under strict quality control in Anse Ger Micoud, our coffee is hand-picked and processed within 24 hours. It is washed and dried using natural methods to ensure the absolute best crop for our customers. Roasted in-house in small batches made to order, our coffee is the freshest you can buy on the island.

Our chocolate requires no preservatives or added flavorings. What you taste are natural notes of cherries, fudge, lemon, balsamic, and butterscotch, with hints of walnuts and tobacco. You may wonder how these complex flavors occur naturally—rest assured, they do. This is why Saint Lucian chocolate is classified as fine flavor.
Tree Power
The rich volcanic soil of the Eastern Caribbean produces these exceptional cocoa beans, nourished by pristine rainforest water and natural springs. At Noble Tree, we prioritize social responsibility, corporate responsibility, environmental impact, and sustainability. These principles are at the heart of our mission, ensuring nothing from this exquisite bean goes to waste. Whether it's fertilizer made from mulched pods, vinegar from the fermentation process, or cocoa butter from the liquor stage, every part of the bean is utilized in our state-of-the-art processing plant in Micoud.
Bean Power: The Process
Our chocolate ice cream is made using just cocoa nibs and crème anglaise for a pure and authentic taste. Alternatively, we’ve crafted bonbons infused with flavors like peppermint, rum, passionfruit and coconut, or coffee and cherry.

As proud members of the BCCA, we operate both a coffee and cocoa factory, where our passion for the finest coffee and cocoa drives everything we do. We source our tree crops from local farmers and our own plots of land, ensuring that every bean and pod is of the highest quality. By processing everything in-house, within our Ministry of Agriculture-certified factories, we maintain complete control over purity and quality.
Our coffee is roasted to perfection, guided by the expertise of a Master Roaster with over 40 years of experience, while our cocoa is crafted into chocolate by Michelin-standard European chocolatiers. At NobleTree, we go beyond the ordinary to deliver the best-tasting coffee and cocoa, from crop to cup and bean to bar.
